i'm working with an older AM2 socket Dell Optiplex 740 and it's having a problem where the network adapter isn't visible to the OS. I've tried using software tools on Windows 8.1 and Linux Ubuntu 18.04, but the best results came from Windows, possibly showing it as "Broadcom NetXtreme 57xx Gigabit Controller."

Did you verify the connection lights on the device with the Ethernet cable? If they're off, look into the system's BIOS settings to ensure the LAN card is activated.

The lights activate once the device is connected and powered on. I recently switched it off to conserve energy since I wasn’t planning to use it.

My investigation shows the system relies on a Broadcom BCM5754 controller. I located a troubleshooting discussion on Ubuntu forums and some Dell driver resources... https://www.google.ca/search?q=Broadcom+...e&ie=UTF-8 Consider trying those drivers.
