It's a bit disappointing since I really want the Gigabyte Aorus Pro WiFi X570 edition, but it's out of stock everywhere because of the current situation. It's frustrating for me.

You could simply choose the standard Elite or Pro model and then attach a Wi-Fi adapter.

It really depends, since I won’t have my components until late November. That timing should bring more stock, and I’d choose the pro version over the elite because it’s a newer model with WiFi 6, which should be available by the end of November when I need it for building in December around Christmas.

You can purchase 802.11ax PCIe adapters. Their performance isn't clear, but they are available. If you're planning to build later, expect the B550 to launch first, followed by MSI X570 Tomahawk Wi-Fi. Around then, the Ryzen 4000 might be discontinued, making X670/B650 more accessible. That gives you a wider selection by then.
