You can select two of the three nodes in raid0 by configuring your raid settings to include those nodes and adjusting the raid configuration accordingly.

You can manage it, though your steady rates will cap around 3.5gBs, matching roughly one traditional drive. Random access performs slightly better, especially when queue sizes are higher. Ideally, grab a single drive; RAID zero offers minimal speed gains and adds unnecessary complexity.

The GPU won't affect your GPU because it's linked directly to the CPU, and your M.2 slots use the chipset to connect to the CPU.

I already have a 500GB drive, I need two more to boost my gaming storage. My current 10TB HDD is nearly full, and I also have a small case, so I’d prefer M.2 storage instead.

Then just grab a single large M.2 drive. Probably you won’t need the samgsung one for gaming, there are far better options available, and games don’t really focus on storage speed. The DMI limit is unlikely to be an issue here since you’re very unlikely to reach maximum performance on both your game and boot drives at once.
