Choose either chip. Invest everything in the 5800X for satisfaction or opt for the 5600X to save a few dollars for something else, and still be content. I don’t believe the leap from the 6700 non-K to the 5800X will be as significant as the jump to the 5600X, especially if you’re aiming for 3D modeling and other projects.
I recently assembled a new rig featuring a Ryzen 5800X and it’s performing well without overheating. I also opted for a 360mm EKwb AIO from the start, though a 240mm or 280mm would have been fine too. (360mm allows me to run fans at lower speeds.) This setup isn’t just for gaming; it’s built for my brother who works remotely and secured a software development position during the pandemic. He benefits from the extra cores compared to the 5600X. A 5900X or 5950X would have been excessive, and even the Ryzen 5600X would be a significant upgrade over an i7-6700.
It seems 8 cores priced above $300 in 2021 is quite expensive. Both Intel and AMD are affected. The 11900k model stands out as the most costly option.

The first-gen Ryzen matched Haswell's IPC back then. Now my 3770K seems quite weak, even at 4600.
It wasn't just about the IPC. The combination of core-to-core delays and memory latency, along with limited sub-4GHz clock speeds, really impacted the 1000 series. Early Ryzen models performed well for productivity tasks, sometimes matching Intel's performance in non-memory or frequency-sensitive jobs. The 1800X outperformed the 6900K in certain benchmarks until you pushed it past 4 GHz. The optimal overclock for an 1800X was around 3.9GHz, which put it at a frequency disadvantage. Unfortunately, for AMD, memory and speed mattered most in games, helping Intel maintain its edge in gaming until the 5000 series arrived.
I managed to achieve 3200/16 on memory at the 1600 as well as a 3.9ghz OC, though performance remained weak. It was a substantial improvement from FX and major changes in Intel, but I think it was overhyped overall. For most users, AMD wasn't truly competitive for gaming until the 3000 series came out.
