Technically, any title, old or new, can overwhelm even a 3090 when enhanced with high-resolution assets. Half-Life 2 in Cinematic mode with a 4K texture pack readily consumes over 20GB of VRAM. The same applies to GTA 4 (even the 5th version), Skyrim, or any game from the last ten years that includes 4K textures and advanced shaders.
I stayed stable at 3440x1440 but faced occasional slowdowns after upgrading to 4K. You're right, 10GB wouldn't last long with the 3080, and I chose the better performance over lower capacity cards. Avoiding a card under 16GB was the right decision with these new chips.
