I finally understood the problem. It wasn't the X870E motherboard itself, but a compatibility issue between my monitor's handshake/firmware and my RTX 5080. Using a DP > HDMI 4K adapter resolved the issue (sort of), as it lowered the monitor's refresh rate from 165 to 120.

With an adapter it doesn’t really solve anything, but it might help if it does. I faced the same issue with my Z590-a Strix Gaming Wifi after installing a new AW3205QF OLED monitor and 3080 Ti. The screen would light up after a post-beep but nothing displayed. Usually one of four boots wouldn’t sync the monitor. I adjusted my BIOS settings, setting the PCIe speed to Gen 4, but the next day still no image appeared. Even with the onboard motherboard HDMI and GPU removed. I tried flashbacking the latest BIOS, but it kept refusing to flash. Eventually, I flashed an older BIOS file and it worked again. Still unsure what caused it or if it will return. Updated ME this morning to the latest (community release) and plan to go back later. Possible BIOS corruption. Hope it doesn’t happen again.
