Currently I'm developing an ISP that lets its staff access the internet for free soon. I plan to reach speeds up to 150 Mbps, which is quite impressive given the limitations in my country. The standard router/ONT setup uses a Huawei HG8145V5 device. It supports dual-band and gigabit Ethernet, which meets my needs. To gain more control and isolate certain devices like IP cameras and IoT gadgets, I'm considering a dedicated router, switch, and AP. I understand the switch must be gigabit-capable, but does the router need to connect directly to the ISP's router/ONT using gigabit, such as with Mikrotik? Thanks ahead of time.

You definitely need a high-performance router to manage connections over 100 megabits per second. Yet, given the affordable prices of gigabit models, it seems there are still plenty of 100 megabit systems that remain viable options to purchase.
