It offers more cores for future gaming and productivity needs, though it only slightly improves over the 3600. I've been advised that 3600 fits your budget around $1000, but I'm ready to pay a little extra if it improves my streaming quality. As a streamer, the new build is mainly for that purpose. If the extra cost brings a noticeable upgrade, I'll consider it.

I’m uncertain about creating a helpful chart. Any visual would only display results for one program. That’s why reviewers evaluate multiple programs separately. Performance varies with software. There’s a change between MHz and thread counts. A 3600 will run at a higher MHz than an 1800x but with fewer thread spaces. If the software requires thread space, it will perform better; otherwise, it slows down. MHz can offset limited thread space to some extent. The 3600 offers 12 thread spaces, while the 1800x provides 16. However, its speed is lower.

Sure, I'd recommend using a card from the RTX 2000 lineup for the NVENC encoder. The 1660 Ti supports it as well, and the 1660 Super would be a solid choice. All cards from the 2060 to the 2080 Ti models include this feature.
