You're looking to invest more in a bigger graphics card. If a 2600x model is more affordable, go as large as possible. You can always improve the CPU later. For games, focus on what GPU you can get for your budget.
These are around 1440p GPUs, which I believe is too much for 1080p at 75Hz.
The setup looks strong overall. I’d replace the RAM with any 3200–3600Mhz kit, no matter the clock speeds. Research consistently shows that RAM speed under Zen 2 matters more than timing details. It’s unlikely to notice a big jump in cost since a 3600 MHz kit can be found at a comparable price or slightly cheaper. The 5600X will handle your needs well if you have space, but aim for at least a 5700 for smooth 1080p gaming. A 5700 paired with a 3600 CPU should deliver around 100fps on most games.
