Your build appears fine as it is. I just want to mention that noise can vary from person to person—some might notice the motor ticking in a fan, while others don’t. You could try replacing the fans with models like Noctua or Be Quiet!. Also, multi-GPU configurations seem outdated...and honestly, it’s not worth mentioning.

If you really need your PC immediately because the previous one stopped working, then definitely wait. A massive generation change is approaching with the RTX5000 series and similar impressive improvements (about 70% more performance on RTX5090 compared to RTX4090). These are expected on next-gen AMD processors within about a year, by the end of this year. It would be ideal if you schedule your build after their launch.

My setup is sufficient for gaming right now, though a bit laggy for AI tasks (work...). It includes an RTX 2070 SUPER and an AMD Ryzen 7 3700X.

It would be better to wait a while longer.
The combination you currently have is okay. It's a bit slow, but it should last another year.
