It's displaying six cores. Showing threads isn't necessary because the processor isn't hyper-threaded, so each core runs just one thread.

I believed it had hyper-threading, as I wasn’t familiar with Intel and assumed the i5 model didn’t support it.

The number of graphs matches the count of logical processors; for non-hyperthreaded CPUs, each core provides one thread, or a "logical processor" in Windows Parallels, per CPU-core. With hyperthreading, two threads exist per core, doubling the logical processors accordingly. On a 6-core non-threaded CPU, you'd have six logical processors and thus six graphs. A 6-core hyperthreaded CPU would yield twelve logical processors and twelve graphs.
