The only real improvement for your setup is the 5800X3D, costing about £300. Other 5000 chips offer little extra benefit, while 7000 or Intel models require a new motherboard and possibly RAM for significantly higher costs.

You don’t get a good upgrade for £200; the 5800X3D is the best option. What games are you enjoying that make you think you’re high-end? A 5600X won’t have trouble with a 6700 XT unless you’re playing esports at low quality or 1080p.

Don't rely solely on those calculators. What's your GPU utilization? If it stays under 95% most of the time, you're likely free from bottlenecks. There could be a minor issue with 1080p, but it's not a cause for concern. AMD is rumored to soon release the 5500X3D and 5700X3D, while the 5700X3D and the existing 5800X3D are the only viable AM4 upgrades at the moment. Have you thought about upgrading to a 1440p display? The 5600X won't create a bottleneck with a 6700XT on a 1440p screen.

I doubt the calculators (they’re all faulty). Which games have noticeable slowdowns? What’s the GPU and CPU activity during those moments? Are the temperatures stable?
