I've been working with OpenShot for editing videos, but most other editors don’t handle 1680x1050 without black borders or poor quality. My monitor is great, but I’m wondering if it’s compatible with most editors I’ve used before. Anyone know a better option that avoids these issues?

When the quality is satisfactory, the issue likely lies with the codec and bit rate you export. The black bars will only show up if you didn’t select a different aspect ratio from your original clip.

Reviewed the details. My screen ratio is 16:10. The issue is that none of the editors I used support that format—only 16:9 was available.

No, you can't directly convert a 16:10 video to 16:9. They have different aspect ratios, so you'd need to resize or re-encode the video to match 16:9 while maintaining quality.

Did you capture a gameplay? If yes, here are your black bars. Your standard output resolution is 1920x1080, while your monitor and game ran at 1920x1200. If it's live-action footage, the difference is negligible. I meant the aspect ratio refers to the video editor's pixel dimensions, not your screen size.

Openshot is a top video editor for Linux. You might also explore Blender or Cinelarra.
