I’m looking for a solution that keeps speeds strong and avoids using two separate cables throughout the home. One option could be setting up a single, longer Ethernet cable with a splitter or a hub to reach both rooms efficiently. Another idea is to use a wireless extender or mesh network to extend coverage without extra wiring.

Set up one cable going up and connect it to a switch (any ~$20 gigabit unmanaged model from Amazon will suffice), then extend two cables from the switch to each of the routers upstairs.

You need a Gigabit Ethernet switch. Connect one cable from the router upstairs to the switch. Place the switch in the nearest room to the router. Run another cable from the switch to the first computer inside that room, and a third cable from the switch to the other area. Have you got any questions?

Choose a 5-port gigabit unmanaged switch. Ensure it functions as a switch, not a hub.

Everyone else agreed that a basic Gigabit Ethernet switch functions properly.
