I just set up an account for the 'AWESOME' game, but I realized I needed to enable SMS protection. I used my phone number, but now I’m wondering if I can disable it while keeping access to Destiny 2 since I already have my own account and my brother is playing with mine. Any advice would be great!

Maybe, but why would you want to? It's not intrusive or anything, there is no spam email or something like that, and once you set it up it's "gone" until you need it.

It requires entering a code you received on your phone to log in.

However, if OP makes a single sign, he won't need to sign again unless he logs out or changes the setting. OP could attempt it, and in the worst case, he might have to turn it back on later.

You can apply it to your personal account, but using the same phone number across multiple accounts isn't allowed. Each account needs its own unique number.

They implemented this for the top 500 in Overwatch to restrict access, ensuring only one account could claim it. Previously, skilled players often had multiple accounts in that range.

Essentially because ranking isn't emphasized and it's mostly a PvE grinding experience, they likely just added this to prevent multiple accounts from being created and resold on the grey market. It's unlikely you can disable it completely. However, once the 18th update comes around, that setting should be removed as the free game offer ends.

Sure, I'll do my best to adjust it after the 18th. Thanks!
