Choosing an i5 usually works well on most systems. For the i7 space heater, go for the more expensive model instead.
A 280mm AIO should comfortably reach over 5GHz with an Intel 10700K. For RAM, go with the most affordable 3200/3600 package unless you prefer higher clock speeds; otherwise, this setup is optimal. You can likely fit it in front of your case without needing a case change.

I saw this information earlier when discussing future proofing requirements. My i7 8086ks works similarly to the i510600k in games, giving around 2018 performance. Even an i7 10700k isn’t a big upgrade right now, though it might become one later. I’ve stopped purchasing six-core CPUs, but I’d still consider getting an eight-core option.
Before placing your order, I noticed Gigabyte boards are included with an SSD. Is this a consideration for you, or does the MSI model simply outperform them enough to justify the price?
