I would suspect the monitor power cable. Verify that it is completely inserted into both the monitor and the wall outlet. If the monitors are not briefly losing power, we can begin examining the PC hardware. You should have the display cable connected to the graphics card, not the motherboard. If this is correct, attempt to connect the monitor to the CPU via the motherboard instead.
I don't believe the problem lies with the PC itself, but consider removing and reinserting the graphics card and CPU. Capture a photo of the CPU pins on the motherboard and inspect for any bent pins. Ensure all cables connected to and from the power supply are securely fastened. Repeat the same steps with the RAM. Check for any loose screws or conductive components touching parts. A slight movement when disconnecting power from the PSU might produce a metallic sound if something is moving.
I am part of the same lack of skill. When I acquired my standing desk, I began experiencing comparable problems. It turned out that the power cable for one of my monitors was being pulled against the wall just enough to cause it to lose power intermittently. We all learn from our own experiences, and it's helpful to find others who have made similar mistakes so we can skip the trial and error process.
Occasionally happens to us all
I'll follow up tomorrow after a few hours of gaming and let you know what happened, unless then I'll begin handling everything else you mentioned.
When your computer was struggling with power, you'd need to restart it again.
Before installing the graphics card, check the onboard video to ensure compatibility.
