I found the Windows 10 layout acceptable, though I haven’t fully tried Windows 11 yet. I also don’t like how they limit older devices with their support.
cantankerously votes xfs win10 GUI performed reasonably well during the Windows integer update. Mostly the other features felt odd or unsettling. I haven’t noticed major improvements in the 11 GUI. The negative aspects in Win10 appear to have intensified in Win11.
The Windows 10 design retained some older elements from previous versions while also introducing modern features. I believe Microsoft should provide a choice to revert to the Windows 10 interface, similar to how earlier Windows releases offered a classic look. That would give users more flexibility.
It seems the Win11 interface feels a bit unusual to you. Despite that, nothing compares to the plain, unremarkable look of Windows 10's title bars.

They didn’t resolve the slow update process in Windows 10, even with a strong internet connection. I haven’t tried Windows 11 yet.
