Hello, I’m trying to figure out how to locate a router that meets these specific needs. I’m looking for something that supports self-hosted VPNs like Fritzvpn, a Nord VPN connection, and dynamic DNS capabilities. I also need a cellular backup option. Could anyone recommend any modems that bundle all these features together? I’m open to suggestions, and I’d also consider pairing it with a managed switch if possible. My setup uses Cat 7 wiring, but none of my devices can handle the required bandwidth. I’m mainly interested in gigabit speeds, though I’m flexible to upgrade to 10 gigabit if needed.

Running a tiny computer as a router requires custom software configuration, not standard options.

I concur with @whispous: you'll require a more durable device than what a typical router offers, particularly when using a VPN. Consider exploring options from Protectli, which supports pfSense, and includes a 4G/LTE modem. Below are the steps to enable 4G/LTE failover on their appliances.
