It seems neither of my machines will ever be able to run Microsoft Flight Simulator 2020, so I was curious about the most affordable configuration for FS2020. Thanks in advance.

This depends on the performance you're comfortable with and your budget. The most affordable option is running at 30fps with low settings, are you okay with that? That game appears to slow down even on high-end systems. Check this out: For a flight simulator system in 2020, you'd likely need around $800 for a good setup.
