I need to adjust my CPU and GPU temperatures but only have the standard coolers available.
I’ve checked AIO liquid coolers and am unsure which ones to choose. I should consider the available options: one 2 x 140 or 120mm radiator and a few 1 x 140 / 120mm ones.
I’m also looking for advice on how to overclock effectively.

Much hinges on the motherboard you're using. Without a 990 or one of the rare 970 boards with solid VRMs, progress will be limited.
