I hesitate to suggest it because I'll freely admit it's not much like Hitman, but this comment makes me think of Deus Ex. They're more RPGs than anything else, and the stealth is really not much like Hitman, but they do offer a lot of freedom to approach objectives in different ways. The story missions are objective-based, but the level design is generally excellent and they're full of different hidden paths. Here's a review that hits on a lot of these points: If what you want is another game where "stealth" means hiding in plain sight in densely crowded parties you weren't invited to and finding clever ways to manipulate intricate AI routines, there isn't much else that does that.
