I’m not sure how to figure this out without turning it on, since I can’t see the hardware directly. What methods could you use to check the chip without power?

The second-to-last line identifies the part number. The information before "Costa Rica" refers to the S-Spec, typically unique for a specific chip and step. As mentioned, it's an i7-920. It's interesting it's an engineering sample, though not particularly powerful today. Links provided point to the official specs and product page.
