I just assembled a custom desktop using an Intel DX58S0 board and an Intel Xeon X5650, and I'm planning to boost the CPU speed because 2.6GHz is too slow for gaming and it's limiting my GPU performance. This is my first time overclocking, so I need some guidance.

Xeon does not design to oc. If you need to do it, you can only adjust the BCLK, which will also affect your RAM. Experiment with it, I don't know how far you can push it, since you have 1600mhz RAM, you'll face limitations. Look for information online about this topic and try it yourself.

The Xeon X5650 is compatible with the LGA1366 socket. Search for overclocking guides specific to that socket. It should match the i7-900 lineup.
