It's okay if you need to check your graphics card as well. The ASUS GPU tweak has a background, but I'm not sure about the afterburner feature.

MSI Afterburner displays graphs, while HWiNFO is a program I’m familiar with that includes logging capabilities. You must enable it at startup.
I rely on NZXT's CAM tool that monitors CPU and GPU temperatures along with other metrics such as load, RAM usage, and more. It displays data in real-time across minutes, hours, days, and weeks. I prefer it because it’s still emerging technology.
