That's the only one you didn't cancel out with your requirements, but I'm out of options unless you want Osiris: Early-Access Dawn. It's buggy, but it looks somewhat promising if they can iron out the issues. Crafting isn't on the scale of KSP and others, but there's a strong survival element.
It could be pleasant to be restricted by the usual "servers" since they don’t allow you to do exciting things like exploring the Titan’s back or using cargobob. I don’t often play GTA, but when I do, it’s usually with friends, which makes it acceptable for a while. I haven’t tried the pserver feature yet.
