Linux Mint is a good choice. Information from Ubutu support sites often applies to Mint as well.

With today’s modern interface and user-friendly design, you don’t always need the terminal, but I still prefer it. I suggest Ubuntu personally, while Mint is often seen as its evolution and some users favor it initially. Searching Google will yield numerous how-to articles and guides for the latest versions, each reflecting individual preferences based on visuals, language, and depth of explanation—just keep in mind to delete only when you’re certain about the file or directory.

I suggest using Ubuntu 16.04 or Linux Mint 18. The updates for 16.04 will be released on July 21st, fixing many issues. Also, AMD has released a driver for the RX480 compatible with Ubuntu 16.04.
