Ubuntu is definitely a good choice since it also offers mobile versions, allowing installation on various devices. With Unity support, it seems any compatible application should function smoothly.

Ubuntu is ending support for mobile development and Unity. They’ll move to Gnome in the upcoming update. On my Ubuntu tablet, app optimization for touch remains limited.

Gnome 3 desktop and GTK3 focus heavily on touch interaction. Just choose Gnome alongside your preferred distribution.
