I'm not finding any LGA 1156 motherboards with M.2 slots online. It might be helpful to double-check your search terms or consider other options.

LGA 1156 is around 15 years old and came before consumer M.2 SSDs. It actually predates the widespread adoption of SSDs. The earliest Intel boards with M.2 support were likely LGA 1150, though even those struggled to boot properly.

No LGA 1156 motherboards feature M.2 ports. The M.2 interface gained traction mainly after the Z97/X99 era, and earlier models typically lacked any form of PCIe storage support, let alone specialized slots.

Consider using a PCIe to M.2 adapter as your main option. Just make sure to look into it thoroughly—never tried this on an older motherboard before. It’s wise to verify compatibility before proceeding.

These options function well in Windows and can be recognized, but you won’t be able to start from them without a SATA SSD. Moreover, there doesn’t seem to be a clear reason for an i7 870 to gain NVMe advantages over SATA drives; instead, sticking with SATA is more practical, cost-effective, simpler on older systems, and sufficient in performance.

Sure, it seems your motherboard doesn’t accept UEFI BIOS, so you won’t be able to boot from the PCIe NVMe SSD.

I also used a Samsung SSD with a Pi PCIe adapter, but it wouldn't boot. If you're aware that certain motherboards include PCIe storage in their BIOS settings, does any LGA 1156 model have them—likely ASUS UEFI?

Unfamiliar with any negative aspects. Believe no issues would arise because it was over five years before PCIe storage existed and manufacturers typically halt BIOS updates after roughly a year.
