Click the Windows icon at the bottom left in those settings, and you'll find a choice to launch Desktop instead of the start screen.

Check out Start8 – it costs just a few pounds or dollars, but it eliminates the modern interface from Windows 8/8.1 and swaps it for a perfect replica of the Windows 7 start menu. While some free tools offer similar features, none match Start8's quality.
