I understand the compatibility, but can you overclock a Kaby Lake CPU in a Z170 without issues? Are there any methods to use non-K CPUs in a Kaby Lake similar to Skylake? I believe Z270 motherboards are too costly.

You shouldn't face any problems with overclocking. A Z270 board isn't necessary for this purpose. A Z170 board will fully accommodate kaby lake if you have the appropriate BIOS update.
