Let’s be honest, your issues stem mostly from yourself. You keep pushing AMD while insisting on Intel, and you’re also upset about the current state of Intel. That’s a classic case of conflicting beliefs. AMD would definitely be the better choice for you, no matter what you think. Whether you agree or not, it’s up to you to decide.

It looks like you're right about the RAM requirement. For more than 64GB, you should switch to a high-end desktop platform. This means choosing either the Intel X299 with their 10980XE processor or the AMD TRX40 platform with the 3960X CPU.
