I've used two monitors with my RTX 3060. At night I often switch off the second one to make the room darker while watching YouTube or Netflix. Then my main screen starts lagging or stuttering, unless I force it to show on just one display. Someone has a similar problem or can help me fix it?

Avoid shutting it down; use WinKey + P to disable instead.

I’ve handled this myself, though it’s quite bothersome—it consolidates all my apps onto a single screen, which means I have to reorganize everything later.

Display a complete-screen black picture on the second screen. I have no idea what else would be helpful.
