Following the most recent Windows 10 update my computer takes a long time to start and feels very sluggish. I’m sure this is the reason since everything worked fine yesterday. During the update it also seemed to take all night and reset instead of shutting down after I clicked update and shutdown. Do you know what might be wrong and how to fix this?

Could be useful to understand the components of the PC. Please share complete specifications, including PSU model and age, as well as the PC and PSU ages.

I7 6700k, gtx 1080, 16 gigabytes of memory. It's been around for about six years. I don't recall the exact PSU, but it seems to be 500 watts.

It seems certain recent Windows 10 releases have triggered some issues. Certainly, your concerns could stem from that. Have you previously created a restore point before these updates? Restoring the system to that earlier state might resolve the matter. Microsoft should address these problems promptly.
Checking the documentation or inspecting the side of the power supply unit could provide more details, especially if it’s a 6-year-old unit of questionable quality.

I'm not really at home right now and won't be for a while (I went back to my dorm for the week). I heard MS doesn't allow you to go back after about 10 days. Is this accurate? If they release another update, will it replace the current one and fix these problems, or will this be permanent if I don't take action?

The 10-day limit seems intended for 'major builds'. I'm not sure if the recent updates were meant for a major build, were they? The usual updates can be undone, and I don't know of any time restrictions for those.
If the issue stems from the updates, they should likely be fixed in upcoming patches.
