Do you have a existing Linux install available? I would try dd. Although Rufus has worked for me in most Linux install applications I have one version where it does not work and gives me an output similar to yours.
I possess the ISO file provided by the Ubuntu website for download.
Consider trying dd on Rufus to see if it affects things. If not, you might use dd from the command line on Linux. I've found better results with some distributions.
