Any tips on how to set my memory down for better compatibility with this motherboard? Xmp settings make things crash, so I'm worried that's why too. I have 32gb of ram currently running at stock speed and it works fine right now. I'm brand new to overclocking RAM, so I'm a bit nervous about messing something up.

Turn off XMP and leave your RAM set to 2133.

My CPU is a 9700K. I didn't turn on XMP because it makes my system crash, but I wanted to use my memory better. Do I just increase the clock one bit at a time or set specific timings? I'm new to overclocking RAM so please explain what's right for me.

First, check if that RAM stick is on your motherboard list (QVL). I guess it isn't there because it wasn't tested before or failed when people tried putting it in your computer. If it passes the tests, try adding just one stick to one slot at a time. Maybe you have a problem with the slots or the sticks themselves. You can also run memtest 86 for hours to check it properly. There is another tool from howtoforge.com that checks memory on your PC. It isn't as good as memtest but might work too.

It's not listed, and I don't have trouble running it at normal speeds. I just want to get more speed out of it. So I'll lower the clock speed for what the RAM can do but raise it from where it is currently set. The motherboard should handle those faster speeds.

So, you should keep it exactly how it is now. Just don't turn on XMP.
