Running at 4.8ghz with 1.350v is a solid setup. Is this a suitable overclock and voltage setting? The CPU is connected to a reliable Corsair liquid cooler, and idle temperatures at 4.8ghz are in the mid-20s. Thanks.

Voltage is a bit high, but with your CPU at LOAD below 65°C it's fine. Made a minor adjustment to 4.7ghz @ 1.350v. Performed stretch tests using prime 95. Maximum temperature reached was 68 degrees. Believe it was a solid and stable overclock.
If you increase the fan curve, you should be able to drop temperatures under 68°C.
Overall, it's a decent overclock with some room for improvement.

I also have an I5-6600K and only overclocked it to 3.8 ghz.

Although some good overclocking was achieved, this is clearly the maximum performance this CPU can reach.

Yes that is an amazing overclock, however i doubt your temps are that good even with that cooler considering the overclock....
