I’ve been thinking about switching from my 2700X since I discovered how much it lags behind newer AM4 models. The biggest concern is the heat management—videos show good heatsinks on VRMs for 5000-series chips, but my board’s cooling looks inadequate. Will this affect gameplay noticeably, or will it only show up during benchmarking tools like Prime95? Your setup includes a Gigabyte B450M DS3H with a Ryzen 7 2700X and an RTX 3060 Ti.

It's a solid board as long as airflow is sufficient in your setup. You won't push the CPU to its maximum during games, and the 5800X3D doesn't need powerful VRMs. In my opinion, just update your BIOS.

I've set up three intake and three exhaust ports with a custom curve to prevent negative pressure. The chip seems resistant to overclocking, and it tends to perform better at lower voltages, which aligns with what you're experiencing.

You should be all right. The 5800X3D uses minimal power. Which CPU cooler are you using?

That is plenty airflow, you are replacing the air inside that case very fast! You won't need to undervolt it but if you want, go for it. All in all, it will run fine on your motherboard.

My Corsair H150i CAPELLIX is a bit too much, but I think it keeps up with AM5, right? I usually stay under 55°C.

Certainly, everything looks good on that section now.

On this platform I'd choose a Ryzen 7 5700X. It's a significant improvement over the 2700X. The 5800X3D provides roughly 120% of the 5700X performance but costs 170% more, especially with top-tier GPUs.

I’ll take your advice seriously. The 5800X3D caught my attention due to its cache technology, which seems advantageous for CS2—the game I intend to play. I’ll monitor the market prices and finalize my choice once the available listings are sold.
