In my opinion, the most important aspect is the size and shape. They vary in form and dimensions. With your M700, I’d likely stick with the M800 because of your familiarity with its design. The M800 seems to offer a 4K option (though I’m not sure if it’s worth it for this mouse), whereas the VXE R1 SE doesn’t.
I actually don't know my grip well. The M700 seems like a fingertip or palm mouse, but it feels a bit too big for me.
My hand measurements are 18 cm from the middle finger to the wrist, and 9 cm from the thumb to the little finger. Is the VXE R1 SE a claw mouse? I believe I'm using a claw grip in the game.
Some people say VXE uses a BEKEN MCU, which is considered bad, while others mention the M800 Ultra uses Nordic technology, which is better. I think I'll go with the VXE R1 SE.
