i was curious about my overclock setup, which includes an intel core i7 6700k running a gtx 1070 superclocked acx 3.0. The memory clock is 700mhz and the core clock is 125mhz. my average tamps are around 51c.

I don't understand. Is it stable? If it is, then yes it's good. A 700mhz offset to the memory seems quite high—no artifacting or anything? Just keep in mind there are problems with VRM cooling on the ACX 3.0 cards; I'm not sure if your specific card is affected without its model number.
