I just completed assembling my new PC but discovered that any game I play runs poorly. It doesn’t seem to depend on the game’s difficulty. I’ve reset it and enabled XMP in the BIOS, yet nothing changed. I’m unsure what else I should try. This is my first build, and everything appears to function normally. Temperatures stay within average idle ranges during gameplay, and the task manager shows no CPU or memory bottlenecks. What could I be overlooking?

I just completed the process, right? Have you visited the motherboard manufacturer's site to install all relevant drivers and utilities? Did you download the latest graphics driver from their website? When a PC is initially assembled, Windows Update and other background tasks often run, which might lead to performance problems.

Do you have a connection between the monitor and the GPU?
Need the most recent BIOS updates?
Looking for the latest chipset driver files?
Which Nvidia drivers are currently available?
How are you checking the temperatures?

You may consider updating the BIOS to accommodate higher RAM speeds. For a long time, 6,000MHz was the maximum for Ryzen 7000, but newer BIOS versions allow exceeding this limit... although the 7800X3D doesn't see much benefit from faster RAM.
