I tried this a couple of years ago with the 760s release, achieving roughly a 25% boost between 2 and 3 cards.

That's correct, the 660s are accurate, and 760 supports three different SLI configurations.

No, one 780 performs much better than the SL 760's specs. It's unclear where you're pulling these numbers from.
