You'll need to wait until a jailbreak is available for your device and software. As @curiousmind34 mentioned, turning off automatic updates will keep you in line with the latest versions. When the appropriate update becomes accessible, a straightforward YouTube guide should suffice.

14.5 still available? The newest is iOS 14.4.2. Unless you're testing a beta, consider downgrading to an older signed version—14.4.1 remains the oldest currently (https://ipsw.me/iPhone11,2). Avoid installing the latest if you aim for jailbreaking; it can interfere. 14.4.2 is the most recent supported for jailbreaking, though not for XS. For Unc0ver jailbreak, 14.3 is supported but isn't signed, so you can't go lower. Stick to the lowest compatible OS and keep an eye on future updates.
