For streaming, it’s best to rely on the GPU, as TurboNVC is powerful. The 3900x would speed up editing significantly, though keep in mind that many video editors remain mainly optimized for Intel.

It varies; for recording you're likely using NVENC, while for editing it seems your software handles it well with NVENC support. I’m not a big video editor, just crop and make minor changes.
