It’s surprising that NUC is cheaper than models from 2012. What makes sense is adding a $600 operating system to a $300 budget machine.

According to official sources, there is no server 2012 support for the NIC. However, some users have reported finding alternative solutions.

At least some versions of the models are compatible with Server 2012 R2.

We're using a basic setup with a low-end Pentium processor, Logisys PSU, 1.5TB SSD, 2GB DDR3 RAM, and a generic cheap motherboard. That means it should work with any driver support—just make sure the manufacturer hasn't restricted updates before installing drivers, otherwise you'll get full compatibility.
