You can definitely use just one 8-pin connector for your CPU. The issue is with your PSU having fewer connectors than you need. You can switch to a single 8-pin connector for the CPU, which should work with your motherboard and i5 14600kf.

EPS is designed for the CPU, while PCIe suits the GPU. A 850 RM should include two EPS 4+4 cables.

RM850x includes two connectors for the CPU and three additional PCIe connectors. I’m pretty confident about this since I already have one and use all of them.
