They appear gray now, but they should display black on light backgrounds and white on dark ones. The operating systems were significantly more readable before the gray change.

Mobile screens display white on black or dark grey tones. The Sheets dark mode can be tricky, especially with fill colors involved.

No, you can't change all fonts to white directly. You can adjust individual font colors or styles.

Occasionally you can adjust it, but I think black and white text is much simpler to read.

It was changed because of problems with vision in the 2000s and before. The current version is better now.

I like neon green on pitch black... at least until Vista, but now it's just no custom options available!
