You could always test on a single GPU, but I don't think that's necessary (unless I overlooked something).

Both of your GPUs are dual-chip cards, so taking one out of a PCIe slot would leave you with two. It makes sense that the other system with lower specs still worked well. I think having multiple gaming rigs is a good idea.
