The issue seems to be related to Unity Player files in the event viewer. Your attempts to disable XMP/DOCP didn't resolve the problem. Consider checking if your system has any outdated or conflicting software that might interfere with Unity's DLLs.

All other aspects seem normal. It appears there might be some interaction between the Unity engine software and whatever modifications you made to your system. The differences you noticed between when it worked and when it didn’t could be important. It could be a configuration change, a Windows 10 update, or something related to Unity itself. No problems found with any game except Unity titles. Updated drivers for the latest games, BIOS and chipset, plus Nvidia drivers. All Windows updates applied, but some crashes persist beyond version 21H1.

It's a new setup in about a month. I'm feeling a bit frustrated because I think I'll have to return the CPU for an RMA, which won't be enjoyable. My PC just froze completely and restarted after what seemed like a bug check.

There seems to be a serious issue here. CPUs are usually acceptable for returns. The main concerns are the 5950 series and 10900 series (not 11900 series), as the 5900 model could be problematic. The problem is that if the resale price of an item is higher than the new MSRP, someone might just issue a check based on their perceived ability to get away with it and then sell your item. This has happened with graphics cards before.

I've already processed a RMA case number 3070 that's currently being tested. It seems it might crash unexpectedly when using NVENC. These other issues/BSODs have happened before on my previous setup and the only component I haven't swapped is the 3700x. Used to run with a 1600x, but it's no longer allowed for testing on an x570 board. Regarding this Unity problem, I really don't know how to resolve it...

Check if the 3070 model is available again. Recent improvements with GPUs seem promising. 3700x looks good—no issues expected.

The issue is still unresolved. Your 1070 should work, but you're facing a crash problem that needs attention.
