Here are some options you might consider for the best deal.
For your needs, a 1080p setup with light gaming and general use is suitable, especially if you already have a desktop PC. You’re considering an AMD APU because it offers better performance than the Iris XE at a lower price.

Your planned games include CS:GO, Fortnite, Flight Simulator 2020 (if possible), Euro Truck Simulator, Farming Simulator 22 and similar titles that can run over Wi-Fi.

The Dell Inspiron 15 Ryzen 3 5425U with 8GBx1 DDR4 is priced at $442, while the Ryzen 5 5625U offers a slightly higher price at $473.
Other models like the Inspiron 16 Ryzen 7 5625U are available at $645 and the HP Pavilion 15 Ryzen 7 7530U at $580.

You mentioned that replacing 1pc 8GB RAM sticks with 8x2 or 16x2 configurations will be done personally since they remain cheaper than purchasing larger capacities.

You should ideally choose a laptop equipped with a separate GPU. Even the poorest options usually perform better than an APU. You really need a minimum of 16 GB of VRAM.
